Do not ask me why, but for some reason it took me forever to finally fall in love with avocados. Let me reassure you it happened and now I try and get avocado with or on anything whenever possible. So naturally I finally discovered this amazing breakfast/snack that is avocado toast. Honestly I have known about it for a long time, a majority of the beauty YouTubers I’m subscribed to order it in their vlogs and it always looked amazing.
So last weekend my mom asked me after doing our typical 8am Hatha yoga class and a bit of shopping afterward if I wanted to try avocado toast. Needless to say I was excited and for good reason, it was absolutely delicious! So delicious that I felt the need to dedicate an entire blog post about it.
My mom got the recipe from the blog Two Peas and Their Pod, I have linked the post of the recipe here for you in case you want to give it a try. The recipe is called Garlic Bread Avocado Toasts, but honestly the day we baked this again it was 100 degrees outside and decided not to turn on the oven and heat the house. So instead we used whole wheat bread and a toaster, for the more optimal “quicker into my tummy” option. This was so simple and easy as well as keeping the mess as tiny as possible. All pluses in my book! Honestly, I don’t know why it took us until the end of summer to discover this, it is a quick easy tasty summer snack that I will definitely be having all the time next year.
I mean I was excited to do a blog post on this as well cause it gave me an opportunity to wear my adorable elephant apron from Anthropologie! I feel like avocado toast is the perfect healthy snack that just happens to be the tastiest healthy snack ever hands down.
